Research progress on postharvest regulation of ascorbic acid metabolism in fruits and vegetables

Abstract:Ascorbic acid(AsA)is an antioxidant widely found in fruits and vegetables,which are the main sources of AsA in the human body.The presence of AsA not only affects quality and stress resistance of fruits and vegetables,but also closely relates to postharvest maturity and senescence in these produce.This paper presents a comprehensive review on the the physiological effects,metabolic processes,and regulatory mechanisms of AsA metabolism in fruits and vegetables,thereby providing a solid theoretical foundation for further research on the regulatory mechanisms of AsA.
