Abstract：Melanin is widely present in plants and animals,and tyrosinase(tyrosinase,TYR)is the first and only rate-limiting enzyme that catalyzes melanin production.Tyrosinase inhibitors are widely used in medicine,cosmetics,food industry and other fields,but the current tyrosinase inhibitors often have stability and safety problems.Therefore,people are more inclined to screen tyrosinase inhibitors from natural sources,and their screening methods are constantly innovative.Based on the previous research results,this paper introduced the role of tyrosinase in food,medical cosmetics and agriculture,and summarized the current screening methods of tyrosinase inhibitors,so as to effectively and conveniently screen out effective tyrosinase inhibitors from natural products and lay a theoretical foundation for their better application in practical production.
