Effect of interfacial properties on oil oxidation and inhibition of emulsion

Abstract:The interface layer of the emulsion is the contact area between the aqueous phase and the oil phase, which is the key area related to the oil oxidation in the emulsification system, has a significant effect on the stability of the emulsion. Therefore, knowledge of emulsion interfacial properties and research progress of oxi-dation theory to improve the stability of the emulsion research is of great significance. In this study, the key fac-tors affecting the oil oxidation in emulsions were summarized, including the interfacial charge, thickness, compo-sition and viscoelasticity of the interface film four aspects, on the oxidation stability of the emulsion. At the same time, inhibiting methods for interfacial oxidation by adding the natural antioxidants, polysaccharides and poly-phenols were described briefly. The aim of the article is to provide theoretical support for the study of the interfa-cial oxidation stability of the emulsion.
