Abstract:To investigate the effect of cold plasma(CP)technology on the postharvest quality of broccoli, five groups(control,30 s/24 h,60 s/24 h,30 s/48 h,and 60 s/48 h)were set up based on different treatment durations and intervals. The broccoli samples were stored at room temperature, and changes in respiratory intensity, color, chlorophyll content, ethylene production, malondialdehyde(MDA)content, and total phenol content were determined. The results showed that compared with the control group, the 60 s/24 h treatment significantly accelerated quality deterioration in broccoli, which might be related to oxidative damage caused by excessive treatment duration combined with too short intervals.Among all five groups, the 30 s/24 h treatment exhibited the optimal comprehensive preservation effect:on day 6 of storage, the respiratory intensity decreased to(69.60±3.10)mg/(kg·h),the chlorophyll content was maintained at(6.88±0.28)mg/g,and ethylene production was controlled at(0.50±0.07)μL/L.This treatment effectively delayed chlorophyll degradation, reduced ethylene release and MDA accumulation, inhibited respiratory intensity, and maintained total phenol content and the inherent color of broccoli. In conclusion, appropriate plasma treatment was beneficial to prolong the postharvest preservation period of broccoli.
