Effects of Steam Explosion Pretreatment on Oil Extraction Quality and Antioxidant Activity of Celery Seed

Abstract:Steam explosion was applied to treat celery seeds,and the effects of different steam explosion pressures and holding times on the structure,oil extraction rate,physicochemical properties and antioxidant activity of celery seed oil were investigated.The results showed that the maximum oil extraction rate of 6.72%was achieved under the steam explosion condition of 1.5 MPa for 30 s.Steam explosion treatment improved the quality of celery seed oil:the acid value and peroxide value decreased by 11.1%and 33.3%,respectively,while the iodine value and vitamin E content increased by 9.1%and 42.8%.This treatment also altered the fatty acid composition and reduced the content of free fatty acids in the oil.After steam explosion,the surface of celery seeds became rough with damaged internal structures,which facilitated the release of oil and active substances.Consequently,the antioxidant activity of celery seed oil was enhanced,and the composition and content of fatty acids were changed.At a concentration of 1.0 mg/mL,the scavenging rates of the treated oil against DPPH and ABTS free radicals reached 79.19%and 93.28%,respectively,indicating a significant improvement in antioxidant capacity compared with the untreated group.In conclusion,steam explosion pretreatment is conducive to the extraction of celery seed oil and the release of active components,which can provide a theoretical reference for the further development and utilization of celery seeds.
