Abstract：The shelf life of fruits and vegetables is an important way for consumers to assess their quality.The deterioration process of fruits and vegetables is complex,resulting from the interplay of various factors.Therefore,this paper introduced the microbiological indicators,physicochemical indicators and sensory indicators related to the quality of fruits and vegetables,summarized and analyzed 5 different types of shelflife prediction methods and their research progress,while also looking ahead to future research trends to further ensure food safety and consumer health.
