Effect of Different Transportation Time on Shelf Life Quality and Microstructure of Winter Jujube

Abstract:The thin skin of winter jujube is brittle and easy to be damaged in transportation,which affects the quality and value.To explore the influence of transportation distance on the shelf life of winter jujube,the experiment simulated different road transportation distances,used a vibration test bench to treat winter jujube,and studied its quality change at normal temperature.The results showed that the vibration accelerated the decay,weightlessness and softening of winter jujube,and the peel lost luster and turned red.The vibration accelerated the physiological activity of fruit,resulting in the decomposition of total soluble solids and titrable acid content,the decrease of ascorbic acid content,and the inhibition of soluble protein accumulation.The vibration also accelerated the degradation of the protopectin and damaged the cell structure of the pulp.The effect of 20 min vibration on the quality of winter jujube was minimal,and the quality deterioration accelerated with the increase of vibration time.Therefore,measures such as vibration reduction packaging should be taken in the later stage of winter jujube production to avoid long-distance transportation.
