Abstract：Plant polysaccharides are polymers formed by the polymerization and dehydration of plant monosaccharides and widely distributed in various organs of plants and have biological activities such as antitumor,antibacterial,antioxidant,hypoglycemic and hypolipidemic.The molecular weight and molecular morphology of plant polysaccharides extracted by different extraction methods are different,and their biological activities are also very different.Therefore,this paper summarized the extraction methods of plant polysaccharides that had been widely studied,and described the main bioactive functions of plant polysaccharides,and analysed the application of plant polysaccharides in food industry to provide references for the development and utilization of plant polysaccharides in the field of food and medicine.
