Research and Development of Black Pepper Flavored Mashed Potato Powder

Abstract：In order to optimize the formula and improve the taste of black pepper flavored mashed potato powder,the potato snowflake powder was used as the main raw material and mixed with salt,black pepper,coriander powder and chives powder.On the basis of single factor experiment,the optimal combination of four factors including salt,black pepper,coriander powder and chives powder was determined by response surface analysis.The results showed that the optimal formula of black pepper flavored mashed potato powder was based on 30 g potato snow powder,with 1.1％salt,0.3％black pepper,0.4％coriander powder and 0.6％chives powder.The sensory score of mashed potato prepared under this condition was 84.5 points,with delicate taste and unique aroma and odor of the product,which not only improved the added value of potatoes,but also enriched the types of flavored mashed potato powder,and opened up ideas for the market development of mashed potato leisure products.
