Nutritional Health Function and Product Development of Zucchini Seed

Abstract：In this paper, we reviewed the nutritional components of protein, fat, vitamin, carbohydrate and mineral substance in Zucchini seed, described the healthy function in treating hyperlipidemia auxiliary, preventing atherosclerosis, treating urinary diseases, lowering cholesterol, nourishing intestine and moisturizing the lung, maintainning beauty and keeping young, and promoting fracture healing of Zucchini seed. In addition, we briefly analysed the development and utilization of Zucchini seed in tailoring medicines, making health care products, making drinks, making oil and making food.
