Research on Physiological Changes of Longan During the Storage Process

Abstract:Longan postharvest respiration metabolism is exuberant, and easily dehydrated and browning. Especially in the first 5 days, skin water loss is serious and browning index rose sharply, which severely limits the longan storage and sale. Strengthening the longan postharvest physiology research provides the basis for postharvest technology of longan development. We used trulia longan as experimental material, and studied the physiology and exterior quality change of the postharvest longan aging process in every 24h at room temperature. The results showed that longan fruit peel aging faster than the flesh, and endocarp rapid dehydrated in the first 5d, and accumulated water loss reached 31.7%, and browning index reached 53%. Because of skin protection, water loss of fruit peel changed obviously in the 6d, up to 10.3%. During Longan mesocarp aging process, the relative conductivity and pH of the pulp and peel gradually rise. Chlorophyll a and chlorophyll b content of fruit peel gradually increased.
