Effect of Sodium Metabisulfite Soaking Treatment on Color and Antioxidant Constituents of Red Globe Grape

Abstract:The effect of different concentrations of Na2S2O5 soaking treatments on post-harvest color and antioxidant constituents of red globe grapes was studied in this paper. The results indicated that Na2S2O5 soaking treatments suppressed the decline of brightness and color saturation of grapes, thus delayed the discoloration. The higher concentration of Na2S2O5 is, the more obvious inhibitory effect is. In addition, Na2S2O5 soaking treatments promoted the accumulation of total phenolic content. The total phenols content of 4%treated group was 0.44 OD280/g after 28 days storage, 0.08 OD280/g higher than the control group. However, treatments had little impact on flavonoids.
