Preservation Effect of Chitosan Coating on Quality of Lingwu Long Jujube

Abstract：Effects of different concentrations (1%, 2%, 3%) of chitosan coating on quality of Lingwu long jujube were investigated at 0±0.5℃ with 90% Relative Humidity in this paper. The results showed that: all the treatments with chitosan coating had preservation effect on Lingwu long jujube, and the 2%concentration of chitosan coating had the best effect on Lingwu long jujube, at the end of storage, which firmness was 11kg/cm2, and weight loss rate of was only 9%. It is titratable acid content was the highest (1.5%), and the relative conduvtivity was the lowest (63%).
