SO2 Injury Threshold and its Effect on Pericarp Structure of Red Grape

Abstract:In this paper, the SO2 fumigation damage threshold and SO2 injury effect on the structure of the grape pericarp under low temperature were studied. The results showed that SO2 entered the fruit mainly through stem and brush, threshold of SO2 injury were 600μL/Lí2.0h, 400μL/Lí2.0h and 300μL/Lí6.0h under low temperature. SO2 could damage skin surface wax layer and skin cells of red grape, and cause the pericarp surface bleaching.
