Effect of Sodium Metabisulfite Soaking Treatment on Red Grape Storage

Abstract:The effect of different concentrations of Na2S2O5 soaking treatments on the postharvest physiologic and biochemical characteristics of red grapes was studied in this paper. The results indicated that Na2S2O5 soaking treatments inhibited weight loss, rot, respiration rate, as well as degradation of soluble solids during storage. The higher concentrations of Na2S2O5 were treated, the strongerinhibitory effect they owned. In addition, Na2S2O5 soaking treatments could reduce the activity of PPO. In conclusion, better effect on the storage of red grapes can be obtained with Na2S2O5 soaking treatment.
