Abstract：The technology of processing fresh fruit and vegetable into powder directly extends the storage period, reduces the loss and costs during postharvest, transportation, packaging, and expands the range of applications. The fruit and vegetable powder is becoming more popular in the processing industry recently. In this paper, the application of fruit and vegetable powder in drink, food, and health care were described., Furthermore,based on the previous studies, the problems and prospects of its application were presented.
