Study on Nitrite Scavenging of Bracken Polysaccharide

Abstract：The nitrite scavenging effect of bracken polysaccharide was mensurated by aniline-sulfonic and hydrochloride acid-naphthylamine ethylenediamine through spectrophotometry. This polysaccharide was extacted from dry bracken with water extract-alcohol extraction method. Based on the single factor experiment and orthogonal test, the influences of polysaccharide concentration, reaction time, reaction temperature on nitrite scavenging were discussed. The results showed that the process optimization on nitrite scanvenging were polysaccharide concentration 20mg/mL, and heated at 50℃ for 15min respectively. It’s scanvenging rate of nitrite reached up to 41.1%.
