Abstract：In this paper, the source of antioxidant peptides was simply introduced, and it's evaluation methods in vitro were mainly described. Besides, the possibility of establishment of general evaluation system and the interaction relationship between different peptides were discussed. The study will provide the information about the action mechanism of antioxidant peptide, increase the comparability of results and promote the development and utilization of antioxidant peptides.
