Application of Chitosan in Fruit Preservation

Abstract：In this paper, the properties and physiological function of chitosan were described. Chitosan can be regarded as suitable fruit preservative due to the properties of good atmosphere modification, moisture maintaining and antimicrobial capacity. The preservation mechanisms of chitosan were discussed and further application of chitosan on preservation fruits weregiven a classified introduction.
