Preservative Study of Garlic Cloves Coated with Sodium Alginate

Abstract:To explore the preservative effects of sodium alginate on garlic cloves ,peeled garlic cloves were coated with sodium alginate and stored at ambient temperature for 15 days .The respiration intensity , texture ,garlicin ,vitamin C ,total phenolic contents and DPPH radical scavenging capacity were measured . The results showed that the respiration of garlic cloves was inhibited by 1% sodium alginate .The texture attribute of garlic clove was kept better compared to the control during storage time .The decreases in vita‐min C contents and DPPH radical scavenging capacity were inhibited .The decreases in the garlicin ,total phenolic contents and antioxidant activity were retarded effectively .1% sodium alginate had a better effect on preservation of garlic cloves .
