Measurement of glycemic index and glycemic load for oats and buckwheat processed foods

Abstract:Objective:To measure the glycemic index (GI) and glycemic load (GL) of oats and buckwheat processed foods to provide scientific diet selection and guidance for prevention and control of metabolic syndrome.Methods:Ten healthy volunteer were recruited and asked to eat reference food and tested foods which contained 50 g of available carbohydrate portions.Their blood glucose were measured before the start of eating (fasting glucose) and at different points within postprandial 2 hours.The GI and GL values of each tested food were calculated based on the algorithms of Wolever and Salmeron separately.Results:The GI value of four oats and buckwheat processed foods separately were 51.5,51.6,39.2,47.8 and the GL value separately were 8.4,9.0,5.9,7.5.Conclusion:Through improved,the oats and buckwheat processed foods had lower GI and GL values and improved their appearance and taste and had better compliance,which were well diet selection for prevention and treatment of metabolic syndrom.
