Nutritional components analysis and quality evaluation in muscle of Mauremys guangxiensis from different populations

Abstract：The experiment aimed to investigate the difference in muscle nutrition quality of Mauremys guangxiensis in different regions of Guangxi,to provide data basis for the protection,development and utilization of germplasm resources of Mauremys guangxiensi.A total of 30 Mauremys guangxiensis were collected from Guangxi Pingxiang(group PX),Guiping(group GP)and Qinzhou(group QZ),respectively,determined the concentrations of routine nutrients,mineral elements,amino acids,and fatty acids in their muscles.The results showed that the crude protein content of the muscles of the three groups of Mauremys guangxiensis ranged from 15.28％to 18.69％,while the crude fat content ranged from 0.16％to 0.98％.Among them,the concentrations of crude fat,crude protein,and total sugar in the GP group were significantly higher than those in the PX and QZ groups(P＜0.05).The content of the macronutrient P in Mauremys guangxiensis was the most abundant.The concentrations of Ca,P and Mg in the GP group were significantly higher than those in the PX and QZ groups(P＜0.05).Among the five trace elements,the content of Zn was the richest,followed by Fe.The concentrations of Fe,Zn,Mn and Gu in the QZ group were significantly higher than that in the PX group(P＜0.05).16 amino acids were detected in the muscle of the three groups of Mauremys guangxiensi.Among them,the content of glutamic acid(Glu)was the highest,and the content of methionine(Met)was the lowest.The total amino acid concentration(∑EAA)was 13.30％to 14.07％.The ratios of essential amino acids to total amino acids(∑EAA/∑TAA)and essential amino acids to non-essential amino acids(∑EAA/∑NEAA)were 35.17％to 37.37％and 64.46％to 71.26％,respectively.The essential amino acid index(EAAI)was 60.78 to 66.98.The amino acid score(AAS),chemical score(CS)and EAAI of the PX group were the highest.A total of 23 fatty acids were detected in the muscles of the three groups of Mauremys guangxiensis.The content of polyunsaturated fatty acids(PUFA)was 35.44％to 63.40％,and the concentrations of eicosapentaenoic acid+docosahexaenoic acid(EPA+DHA)were 3.41％to 20.65％.The ratios of ∑n-3 to ∑n-6 PUFA were 24.74％to 146.94％.The study indicates that the muscles of the Mauremys guangxiensis have a high protein content,low fat content,and a rich composition of amino acids and PUFA,the muscle nutritional quality of the Mauremys guangxiensis from Guiping region is better.
