Abstract:The experiment aimed to explore the effect of hunger refeeding on the muscle quality of hybrid sturgeons.A total of 450 hybrid sturgeons with an initial weight of(12.52±1.35)g and an initial body length of(12.93±1.41)cm were randomly divided into five groups, with three replicates per group and 30 sturgeons per replicate. The control group(group 1)was fed with basic diet continuously for 30 days, while the experimental groups(groups 2~5)were starved for 5,10,15,and 20 days, respectively, and then fed with basic diet again for 30 days. The pre-test period was 14 days, and the refeeding period was 30 days. The results showed that the muscle moisture content of group 3 was significantly lower than that of the other groups(P<0.05),and the crude protein content was significantly higher than that of the other groups except for the group 5(P<0.05).The concentrations of essential amino acids and semi essential amino acids in muscle in group 4 were significantly higher than those of the other groups(P<0.05).The total amino acid and umami amino acid concentrations in muscle in group 3 were significantly higher than those of the other groups(P<0.05).Among the muscle amino acids in the experimental group, lysine had the highest content, followed by glutamic acid, aspartic acid, and alanine, while cysteine and hydroxyproline had lower contents. There were significant differences in the content of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids in the muscles of each group(P<0.05).Among them, hexanoic acid was the main saturated fatty acid, oleic acid was the main monounsaturated fatty acid, and arachidonic acid was the main polyunsaturated fatty acid. The study indicates that after undergoing different periods of starvation followed by the same duration of refeeding, significant changes occur in the muscle quality of hybrid sturgeon.Based on the comprehensive evaluation of muscle nutritional components,it is recommended to adopt a feeding mode of starvation for 10 days and refeeding for 30 days in the breeding process of hybrid sturgeons.
