Abstract:The purpose was to optimize the production process parameters of Bifidobacterium microcapsules. One strain of Bifidobacterium animalis isolated from fresh feces of wild boars was selected for the experiment. The process parameters of Bifidobacterium microcapsules were optimized by single-factor and response surface experiments. The results show that under the optimal process parameters of sodium alginate content of 1.22%,chitosan content of 1.89%,and calcium chloride content of 1.60%,the embedding rate of the prepared Bifidobacterium microcapsules was 57.87%.Simulation experiments of gastric juice and intestinal juice revealed that Bifidobacterium microcapsules could achieve the effect of enteric-soluble but gastric insoluble, and the acid resistance of microencapsulated Bifidobacterium in gastric juice was significantly enhanced. The survival rate of Bifidobacterium microcapsules in continuous gastrointestinal gastric juice in vitro was 62.52%,showing good tolerance. The study indicates that the Bifidobacterium microcapsules prepared experimentally have high safety performance and good tolerance, which is of great significance for promoting the popularization and application of porcine Bifidobacterium microcapsules.
