Abstract:Plant essential oils are plant-derived secondary metabolites with good biological activities,such as antimicrobial,antioxidant and antiseptic preservation,which have great potential for application in the preservation of fruits and vegetables.Moreover,People pay increasing attention to food safety,which has pro-moted the development of green and efficient preservation agents.The study on the types and mechanisms of plant essential oils has made breakthrough progress.Besides,the research on the application of plant essential oils in fruits and vegetables preservation is increasing.The types of plant essential oils,the antimicrobial mechanisms,and the potential applications in fruits and vegetables preservation were systematically described in this paper.In addition,the article briefly outlined the problems in the application of essential oils in preser-vation,and looked forward to the prospects of their application in fruits and vegetables preservation.It aimed to provide a basis for the development of novel preservatives and preservation technologies of plant essential oils,and to promote the application of plant essential oils in fruits and vegetables preservation.
