Effect of Ultrasonic Extraction on Antioxidant Activity of Flammulina velutipes Polysaccharide

Abstract：In order to study the effect of ultrasonic extraction on antioxidation of Flammulina velutipes polysaccharides ( FVP) , the antioxidant activity of FVP extracted by ultrasonic method and water were com-pared.The results showed the antioxidant ability of FVP increased with the increase of concentration in the range of 0.125~2.000 mg/mL.The scavenging activity of FVP was the highest to O?2 , which was followed by DPPH? .The scavenging activity and relative reducing power of FVP to? OH were lower.The FVP extracted by ultrasonic method had nearly the same antioxidant activity as that extracted by hot water.Therefore, ultra-sonic extraction had almost no effects on the antioxidant activity of FVP.
