Abstract：Chondroitin sulfate is an acidic mucopolysaccharide widely distributed in animal tissues such as cartilage,tendons,ligaments,and blood vessel walls in the form of proteoglycans.It demonstrates outstanding physiological functions,including immune-modulating,hypolipidemic,antiviral,and antitumor activities.Additionally,its inherent properties of water retention,colloidal stability,and high viscosity endow it with extensive applications in pharmaceutical,cosmetic industries,thus rendering significant commercial value.This review systematically summarized the historical development of chondroitin sulfate preparation methods,evaluated advanced detection techniques,and discussed future application prospects in medi-cine,nutraceuticals,cosmeceuticals,and related fields.
