Abstract：Objective Unscrupulous traders used the cooking oil or some cheap oil mixed in qualified high - value vegetable oil in order to obtain more profiteering ,this action damaged the health and profit of consumers. So we need to es-tablish a more convenient and rapid detection methods to adapt to the market demand. Methods Using two - dimensional and three - dimensional fluorescence analysis method to identify doped sesame oil,this study was to assess the feasibility of fluorescence spectroscopy in identification of adulterated edible oil. Results By comparing the two - dimensional correla-tion spectra characteristic of each correlation peak,we can distinguish the oil samples. Conclusion This study can provide a new method in the identification of edible vegetable oil.
