Study on the Degumming Process of Okra by the Use of Microwave-assisted Treatment

Abstract：Microwave-assisted treatment was used in the degumming process of okra. The effect of NaOH concentration, microwave-assisted irradiation time and temperature on the residual gum content in okra fibers were investigated.
