Abstract:Safe eating behaviours in stroke patients with swallowing disorders are a key aspect of their nutritional sta‐tus and quality of life. This paper reviews the current status of safe eating behaviour, assessment tools, influencing factors and intervention strategies in this group.Currently, specific assessment tools such as the Safe Eating Behaviour Evaluation Scale for Stroke Patients with Dysphagia are applicable to those who eat orally, but the scope of application is limited;while the Knowledge,Attitude, and Behaviour Scale for Safe Eating for Older Adults with Dysphagia, although concise and easy to understand, needs to be further validated and promoted. There are fewer studies on influencing factors, indi‐vidual, environmental and disease-related variables need to be explored in depth.Existing intervention strategies cover multidimensional measures, but there is less high-quality clinical evidence due to methodological heterogeneity and vari‐able quality. In the future, universal assessment tools should be developed, influencing factor studies should be strength‐ened, and standardised intervention protocols should be constructed through multicentre randomised controlled trials in or‐der to improve patients'safe eating behaviours.
