Abstract:With the yield of polysaccharide as the index, the optimal extraction conditions of polysaccharide from elm seed were determined by single factor combined with response surface test, and the antioxidant activity of elm seed polysaccharide was studied. The results showed that the optimum conditions of extraction were as follows:extraction time 123 min, extraction temperature 82℃,liquid-solid ratio 29 mL/g,lye concentration 0.6 mol/L.Under the optimum conditions, the yield of elm seed polysaccharide was 26.68%,which was 362.39%higher than that of traditional water extraction method. The total reducing power of elm seed polysaccharide was 0.79,and the scavenging rates of superoxide anion radical, hydroxyl radical and ABTS+radical were 46.18%,83.67%,and 78.07%,respectively.
