Abstract：Yantai Black pig meat is delicious and nutritious. Through the test car-ried out on slaughtering Yantai black pig determination, meat and nutrients measured indicators found Yantai black pig slaughtering and Duroc×Landrace×Yorkshire cross-bred pig was not significant, most succulent Yantai black pig indicators measured were significantly higher than Duroc × Landrace × Yorkshire crossbred pig , Yantai black pig amino acid content was significantly higher than Duroc × Landrace × York-shire crossbred pig, Yantai black pig saturated fatty acids were significantly lower than Duroc × Landrace × Yorkshire crossbred pig, Yantai black pig unsaturated fatty acids were significantly higher than Duroc × Landrace × Yorkshire crossbred pig. The results show that, Yantai black pig than Duroc × Landrace × Yorkshire crossbred pig porcine muscle color, juiciness, tenderness and flavor significantly better muscle flavor thicker, higher nutritional value, more nutrition and health care.
