Abstract： HACCP certification can effectively control the hazards in food to ensure food security, is the world recognized standards of food safety in production. Cur-rently, HACCP is widely used in various industries, especially in the service indus-try, catering industry, food processing industry, etc., but in poultry and animal slaughter processing USES also is not much. This article mainly introduced the HACCP system certification application in chicken slaughtering and processing.
