Abstract：Minerals are important for body tissues which play an important role in the physiological func-tion of human tissues.As a new type of mineral supplement,foodborne polypeptide metal ion chelate has the advantages of high biological titer,fast absorption,good stability and no side effects.It has become a research hotspot in the field of functional food in recent years.In this paper,the chelation mechanism of metal ion chelates of foodborne polypeptides was reviewed,and their binding sites and chelation patterns were described.The stability of polypeptide metal ion chelate was analyzed.The absorption characteristics of polypeptide metal ion chelates in vitro digestion experiment and Caco-2 cell model were summarized.Fi-nally,the current research status at home and abroad was summarized,and the development prospect of food-borne polypeptide metal ion chelates was prospected.
