Analysis of Muscle Nutrients of Lutjanus Erythopterus

Abstract：The nutritional value of Lutjanus erythopterus muscle was determined with a national standard method.The results showed that the content of the crude protein,the crude fat,the crude ash and the water in the muscle of Lutjanus erythopterus,respectively,were 18.60％,0.18％,1.58％ and 79.80％.Lutjanus erythopterus was a kind of high-protein,low-fat fish.Its muscle contained 18 kinds of amino acids,and the total of amino acids was 13.82％ (fresh sample),and the total content of essential amino acids was 5.90％ (fresh sample).Essential amino acid at the ratio of total (WEAA/WTAA) was 42.69％,and the ratio of non-essential amino acids essential amino acids accounted for (WEAA/ WNEAA)was 74.49％.The CS,AAS scores and EAAI (63.96) of essential amino acids were high.The first limiting amino acid of lutjanus erythopterus was valine,and the second limiting amino acid of fish was threonine or methionine+cystine.The content of four kinds of metals in muscle of lutjanus erythopterus was lower than several other economic fish.The consisting of essential amino acids reached the standards of FAO/WHO.
