Application of Electronic Nose in Food Science

Abstract:Electronic noses ( e-noses ) are newly developed instruments which mimic the artificial sense of smell.These devices are used more and more widely because the e-noses can detect and distinguish odors objectively , precisely , automatically , non-destructively and at low cost .The review :① presents the structure of electronic nose , describes the sample handling system and detection system ,analyses the sample handling methods , principle and the main parameters that have to be optimized ,introduces types , mechanisms , advantage and disadvantage of common electronic-nose gas sensors .②reviews the applica-tion of electronic nose in food science in particular in the field of process monitoring , shelf-life investiga-tion, freshness evaluation and authenticity assessment .It is evident from the literature survey that the e-Nose will be more widely used .
