Abstract:The changes of respiration rate, flesh firmness, chromatic aberration parameter L~* of flesh, total soluble solids,VC and MDA content,as well as the SOD,POD,CAT,PG,CX activity of Datuanmilu honey peach cultivar were investigated at 25 ℃. The results showed that the fruit harvested in 9 tenth maturity had higher respiration intensity, having worse shelf-quality;if harvested in 7 tenth maturity,it had higher firmness, but the total soluble solids and VC content were lower, and the flavor was bad. The fruit harvested in 8 tenth maturity and stored at room-temperature(25 ℃) could restrain respiration intensity, postpone the emergence of the peak of fruit respiration ,decline the accumulation of MDA and alleviate the decline of total soluble solids and VC content;meanwhile it could maintain higher activity of SOD,POD,CAT. All these proved that fruit harvested in 8 tenth maturity could keep better shelf-qualities.
