Study on the Changing of Keeping Quality and Cell Ultrastructure in Postharvest Pineapples

Abstract：The changes of keeping quality and uhrastructure in postharvest pineapple flesh cell were studied.It was showed that the content of carotenoid in peel,TSS and soluble sugars increased during the first week of storage but decreased later.Contents of titrable acids and ascorbate acid were the highest after two weeks of storage and then decreased. Content of chlorophyll in peel decreased gradually during the whole storage.It was observed by transmission electron microscope that the fruit cell wall degraded,organelle decomposed,and plasma lost. The cell was empty and supported only by light cell wall fibril.
