Abstract:Under the condition of air pollution, the abnormal post-harvest ripening of mango fruit is a new problem for mango production,Results of experiment showed the ripening process of mango fruit treated with 0.5% ethylene solution of 50 ℃ for 5 minutes, then kept in the air condition containing ethylene for 16 hours and then stored in ambient temperature could be effectively promoted and the eating quality could be much improved as well. The physiological and biochemical mechanism of polluted mango fruit are different from those of normal mango fruit;compared with the control, the respiration rate was lower and had no peak;the membrane permeability of the pulp,PE activity.fruit firmness and peel colour changed simultaneously with the respiration rate.
