Study on determination of SOD activity of Yacon

Abstract：Took Yacon as raw material, SOD activity was measured using the tetrazolium method, the study found that, the extraction temperature, ambient temperature, high temperature, medium pH, ethanol and various metal ions had effect on SOD activity to a certain extent, UV and impacted less on the SOD activity, reflecting the SOD dependence of the reaction medium. SOD has a very important influence on the antioxidant effect of yacon.
