Study of material dynamic content in fresh mango under different states

Abstract：Through researching the content changes of anti-aging substances like SOD, POD, proline, nutrients like protein, flavonoids, VC, and carbohydrate like soluble sugar, reducing sugar, total sugar, dynamic changes of fresh mango fruit development in size, color, adversity and keeping fresh were studied, the results show:(1) under different conditions SOD has low activities, small changes. Reducing sugar also has low content and small changes under other three states except preservation. In development and preservation condition, protein has low content and small changes. (2) Other anti-aging substances, nutrients, carbohydrates fluctuate and change drastically and present the characteristics of regulations.
