Analysis and Comparison of the Muscle Quality of Larimichthys croceas Cultured in Deep Sea

Abstract:In order to explore the quality differences of Larimichthys crocea cultured in different far-reaching deep-sea aquaculture platforms,the Larimichthys crocea cultured in the deep-sea aquaculture platforms"Dinghaiwan No.2"(DH-2)and"Mintou No.1"(MT-1)were used as the objects.The conventional nutrients,amino acids and fatty acids in the muscle of Larimichthys crocea were determined and analyzed by national standard biochemical analysis method.The results showed that the muscle of Larimichthys crocea in the two groups of deep-sea aquaculture platforms was more consistent in the composition of conventional nutrients,amino acids and fatty acids,but there were obvious differences in content.Except for crude fat,the contents of other components in DH-2 group were higher than those in MT-1 group.A total of 16 kinds of amino acids and 24 kinds of fatty acids were detected in the two groups of Larimichthys crocea muscle.Among them,the content of glutamic acid was the highest in the amino acid composition,and the content of palmitic acid(C16∶0)and oleic acid(C18∶1)was the highest in the fatty acid composition.The contents of DHA and EPA in DH-2 group were higher than those in MT-1 group.According to the evaluation criteria of AAS and CS,the first limiting amino acid for both DH-2 group and MT-1 group was valine.The essential amino acid index(EAAI)were 89.55 and 94.13,respectively.Based on the above results and the relevant evaluation indicators advocated by FAO/WHO,the DH-2 group was relatively better in terms of nutrition,taste and other aspects.This could provide technical reference for the quality improvement and high-quality processing of Larimichthys crocea in deep sea aquaculture in the future.
