Establishment and Application of an LC-MS/MS Method for the Analysis of 21 Alkaloids in Honey for Safety Risk Assessment
Abstract:There are currently gaps in market supervision. Regarding toxic components contained in toxic nectar plants, there is still no clear quality control standards, leading to the general absence of corresponding toxic component testing procedures in honey products, which poses potential safety risks. This study aims to establish an analytical method based on liquid chromatography-tandem mass spectrometry (LC-MS/MS) to simultaneously determine 21 alkaloids in honey. After dissolving the samples in water, they were extracted with acetonitrile. By optimizing chromatographic and mass spectrometric conditions, effective separation and detection of the target alkaloids were achieved within 10 minutes. The results showed that this method has high sensitivity and good accuracy, making it suitable for rapid screening and confirmation analysis of alkaloids in honey, providing reliable technical support for the safety risk assessment of honey products.
