Abstract：Wheat is the second largest staple crop in China.In addition to food production,the consumption of light and heavy industries such as koji-making,wine-making and petrochemical industry is also an important application direction.With the development of society,the consumption structure of wheat is also changing,and the diversified industrial demand also promotes the iterative update of wheat varieties.The reform and upgrading of wheat production on the supply side plays an important role in ensuring China's food security and market demand.This paper expounds the current situation of wheat production and application in China,summarizes the characteristics and requirements of koji-making wheat,analyzes the advantages and disadvantages of the main koji-making wheat in the current market,and discusses the diversity breeding of koji-making wheat in the future.
